India’s festive season is in full swing. This means entertaining guests and preparing new and exciting meals for the family. We have already checked out canape recipes to make your parties livelier, so let’s take a look at recipes to please the family that are still quick and easy to prepare.
Beetroot blinis with garlicky mushrooms
- 150 grams beetroot
- 3 tbsp. crème fraîche
- 125 grams ricotta cheese
- Small bunch dill
- 40 grams butter
- 250 grams button mushroom
- 3 cloves garlic
To make this delicacy a more healthy snack you can swap the blinis for tart shells from DIP Foods, thus making the preparation even faster. To begin with the topping, mix together beetroot, crème fraîche and ricotta cheese in a food processor until it turns coarse. Season this mixture with chopped dill and stir it well. Melt butter in a frying pan and add mushrooms and garlic on top to sauté them. Fry the mushrooms and garlic until they turn deep golden in colour. Serve a teaspoonful of the beetroot mixture onto the tart shell and add the sautéed garlic and mushrooms on top. Garnish with a sprig of dill and serve hot.
Tomato and cheddar tart
- 1 tbsp. dijon mustard
- 250 grams puff pastry sheets
- 3-4 large italian tomatoes
- 1 cup cheddar cheese
- Salt and ground pepper to taste
- Fresh basil
Place the rack in the lowest position and preheat the oven to 190 degrees celsius. Place the puff pastry sheets on a baking sheet and brush the dough with dijon mustard. Place large tomato slices on the pastry sheets and scatter basil leaves on top. Season with salt, pepper and cheese. Place the sheets in the oven and let them bake for 20 minutes. Garnish with fresh basil and serve this baked canape recipe along with your favourite dip for best effect.
Cheese and chive puffs
- 400 grams cream cheese
- 3 tablespoon finely chopped chives
- Salt and freshly ground black pepper
- 60 grams of butter
- 75 grams of plain flour
- 2 medium eggs
- 30 grams grated cheddar or parmesan cheese
- Pinch of cayenne pepper
Add butter and 150 ml water into a frying pan. Heat it until the butter melts and the water begins to boil. Slowly pour flour into the mixture and beat it until it turns into a thick dough. Let the dough cool for 5 minutes then add 2 eggs and mix well. Once the dough has set add the cheese and cayenne pepper and mix it into the dough as well. Create equal-sized servings with a spoon and pour them onto a baking sheet. Sprinkle any remaining cheese or pepper on top. Set the oven to 220 degrees celsius and bake for 25 minutes. After 25 minutes turn the pastry over and let the other side cook for another 5 minutes until it turns crisp. You will know the dish has been prepared when the covering is firm to the touch and looks golden brown in colour. You can also keep the dough a bit runny and use it as a filling for other tarts or puff recipes that you might have.
