The Khari Biscuit Recipe That Is Perfect for Your Next Tea Break

Constant stress can weigh heavy on your mind and sometimes all we need is a break. What better take a break with than tea and khari? The Khari biscuit has been a staple of Indian households for years. These savoury puff pastry bites can be salty and sweet. It can be eaten as a quick snack on its own or it could be paired with tea and other snacks. It is truly the snack that can be eaten at any time in the day. But what is the perfect khari? The one that makes your tea break heavenly. This khari recipe gives you the perfect blend of crunch and melt in your mouth goodness. Read on to find out how to wow your guests and get the perfect Khari in every bite.

You will need:

2 cups plain flour (Maida)

60 gm ghee

100 gm butter

1 teaspoon salt

1 ½ teaspoon vinegar

1 ½ teaspoon gluten

¾ cup lily margarine

Plain flour for dusting

Lets begin:

 

  1. Add everything except the margarine into a single bowl in the specified quantities.
  2. Pour cold water and mix well.
  3. Knead the dough until it is smooth and glossy.
  4. Place the dough on a smooth surface which has already been dusted by flour.
  5. Roll the dough out into a rectangular shape using a rolling pin.
  6. Spread the margarine on two-thirds of the rectangle.
  7. Fold the portion with no margarine on to a side with margarine.
  8. Take the final third and fold it on top of the first two layers.
  9. Press and seal both the edges with your fingers.
  10. Dust the surface with some more flour and place the dough on it again.
  11. Roll the dough out into a rectangle and them again.
  12. Repeat this process two more times.
  13. Now leave the dough to refrigerate for 15 minutes.
  14. Spread plain flour on the smooth flour and place the dough on it.
  15. Roll out the dough into a rectangle.
  16. Cut this rectangle into smaller rectangular pieces.
  17. Even the edges of each rectangle by cutting off the extra dough.
  18. Place the pieces in a baking tray for 25 minutes and let it bake at a temperature of 180 degrees celsius.
  19. Lower the temperature to 160 degrees celsius and let it bake for another 25 minutes.
  20. You can now serve your khari to your friends!

Khari always works best as a side dish for tea. Khari is a diverse dish that can be changed and modified to suit your own needs. You can add spices and masala to our own simple recipe and make a khari that would be spicy and crunchy. You can also make khari with different fillings like grounded meat or mixed vegetables.
